Your deeply relaxing hours in the sauna park, the refreshing swims in the outdoor pool and the unforgettable time-outs with soothing wellness treatments? Does your mouth water at the thought of the incredible food?

You're not the only one! Together, we'll bring some zest and that Tannenhäuschen feeling into your kitchen.

Green, fresh and indulgent - not only the Waldhotel Tannenhäuschen, but also the vegetarian pasta à la Lukas.

Ingredients for 2 people:

  • 250g pasta e.g. orecchiette
  • 50g dried tomatoes
  • 150g cherry tomatoes
  • 1 small bowl of Kalamata olives without stones
  • 1 red onion
  • 1 clove of garlic
  • 1 large handful of rocket
  • 1 bunch of basil
  • 50g parmesan
  • 50g pine nuts
  • 100ml extra virgin olive oil
  • salt & pepper

Preparation in 4 steps:

Step 1:

Wash the basil and place in a tall container with the olive oil, Parmesan and pine nuts. Then blend with a hand blender.

Step 2:

Then cook the pasta in sufficiently salted water until al dente. Tip: Process the pasta immediately after cooking, do not rinse it cold or oil it. This preserves the starch and the pesto adheres perfectly.

Step 3:

In the next step, finely chop the red onion, olives, garlic, cherry tomatoes and sun-dried tomatoes. Then sauté the onions and garlic in a pan with olive oil until translucent. Then add the tomatoes and olives and fry gently. Now add the warm pre-cooked pasta to the pan and stir everything together well. Turn off the heat and stir the fresh pesto into the pasta.

Step 4:

Finally, mix the rocket with a little olive oil and salt. Arrange the pasta on a plate. Finally, top with the salad and freshly grated Parmesan.
